Q: Can these be mounted directly into sheetrock on the ceiling? And is everything included in one set (ie mounting hardware)?

As long as fastened into stud behind the sheetrock. Sheetrock is not strong enough on its own to support the weight. When hanging items overhead, safety is a major issue, as someone could get injured. Might be better to contact a professional to install if you are unsure. Everything shown in picture is included
